Cottage Cheese Eggs
Cottage Cheese EggsIngredients:
- 2 Eggs
- 2 Tablespoons cottage cheese (Small Curd 4% Milkfat)
- 1 Teaspoon Mexican Seasoning
- Spray skillet and use medium heat.
- Scramble eggs and cottage cheese together in small container, then place in skillet.
- Sprinkle Mexican Seasoning on eggs (to taste).
- As eggs begin to harden start folding together, trying to keep wet sides down till done cooking.
